There doesn't seem to be a monitor for IS Size of the public / private information store.... does anyone have these?

That is because there is no such counter in perfmon. Unless you know something that I dont, you will not be able to use monitor to see the size of the Priv and Pub databases.

Is there a way to monitor if the mail store is mounted or not?

2 things:
Yes The info store states in the Event Log that it is mounted or becomes unmounted
Yes you can run the canned script in the Managed Services Folder to check the info store.

You can monitor if the store is mounted or not I believe by simply making sure the appropriate service is started.

Tom,
From what I understand, the Information Store server could potentially be running even though the private (or public) store is not mounted. I don't think that there is an individual service for each.
Just my 2 cents...
