Can anyone tell me why some items discovered by LAN Watch return vendor/product info in the last column and some do not?
Is this an SNMP feature that must be turned on at the device?

Yeah, I think it has everything to do with what the device supports or what it is configured to report.
I believe this is an SNMP issue. If the device responds to an SNMP Get then Kaseya will display the data. If not and the device supports SNMP, then make sure the device is SNMP enabled and the Community String is correct.
